Classic Caprese Salad with a Twist

Ingredients:

  • Fresh mozzarella cheese
  • Ripe tomatoes
  • Fresh basil leaves
  • Extra-virgin olive oil
  • Balsamic glaze
  • Salt and pepper to taste
  • Sliced avocado (the twist!)

Instructions:

  1. Slice the mozzarella and tomatoes into thick slices.
  2. Arrange them on a plate, alternating between cheese, tomato, and a basil leaf.
  3. Drizzle with olive oil and balsamic glaze.
  4. Season with salt and pepper.
  5. Add the sliced avocado on top for a creamy twist.

Hearty Vegetarian Lasagna

Ingredients:

  • Lasagna noodles
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Homemade marinara sauce
  • Spinach
  • Zucchini
  • Mushrooms
  • Garlic
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Sauté garlic, spinach, zucchini, and mushrooms in olive oil until tender.
  3. In a bowl, mix ricotta, mozzarella, and Parmesan with salt and pepper.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Place a layer of noodles over the sauce, followed by the vegetable mixture, and then the cheese mixture.
  6. Repeat the layers until all ingredients are used, finishing with a layer of cheese.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for another 25 minutes until bubbly and golden.
  8. Let it cool for a few minutes before serving.

Savory Mushroom Risotto

Ingredients:

  • Arborio rice
  • Vegetable broth
  • Mixed mushrooms
  • Onion
  • Garlic
  • White wine
  • Butter
  • Olive oil
  • Grated Parmesan cheese
  • Fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a large pan, heat olive oil and butter over medium heat.
  2. Add chopped onions and garlic, sauté until translucent.
  3. Stir in the rice and cook for a couple of minutes until it’s well-coated and slightly toasted.
  4. Pour in the white wine and let it absorb.
  5. Gradually add the vegetable broth, one ladle at a time, allowing the rice to absorb the liquid before adding more.
  6. In a separate pan, sauté the mushrooms until they’re browned and set aside.
  7. Once the risotto is creamy and al dente, stir in the mushrooms, Parmesan, and chopped parsley.
  8. Season with salt and pepper and serve immediately.
